From the kitchen of Amy Simonitch

Time needed:  1 hr

Ingredients:

–        Acorn Squash – cut horizontal
–        1 lb. Turkey sausage
–        Small onion – diced
–        Red bell pepper – diced
–        2 gloves of garlic – chopped
–        1 Tablespoon chili powder
–        1 Tablespoon cumin
–        1 cup cherry tomatoes – halved
–        1 can black beans – drained
–        Salt and pepper
–        1 cup of cheese (optional)

Instructions:

–        Rub inside of squash w/ olive oil and a few shakes of salt and pepper.
–        Place face down on baking sheet.
–        Cook at 375 for 45 min.
–        Sauté onion until brown and then add garlic.
–        Brown sausage in separate skillet. Add onions and garlic once sausage is cooked.
–        Stir in tomatoes, beans, and seasonings. Simmer for 15 min.
–        Once squash is cooked, reduce oven heat to 325.
–        Fill squash with mix. Top with cheese and bake for 10-15 min. until cheese is melted.
–        Broil the last few min to make cheese golden!
